If you had a budget for this, I'd suggest a tiny little portable digital video recorder to replace the VCR ($150)

Assuming you're on a non-existant budget like most schools, I'd use the RCA splitter to drive both a camcorder with RCA inputs and your DVD player screen.   That should work fine.   Ummm..   test the split setup BEFORE you leave shore, okay?</description>
